A delicious chia pudding!

◦ 3 tablespoons chia seeds
◦ 300 ml vegetable drink e.g. coconut drink
◦ some dried vanilla optional

It is best to prepare the pudding the night before or at least 1 hour before serving. Put the chia seeds and vanilla in a glass and pour the vegetable drink over them. Stir well with a spoon, then cover and place in the refrigerator. After half an hour, stir well again so there are no lumps.

◦ 100-150 g yoghurt

Place the berries in a bowl and allow to thaw slightly for approx. 25 min. so that they are still ice cold and firm.

Then place the thawed berries with the (icing) sugar and the yoghurt in a tall blender jug and blend with a hand blender until smooth.

Divide the quick berry ice cream between four dessert bowls with a spoon dipped in hot water and serve immediately.

Ready for a fancy delicious recipe?

For the cake
◦ 750 g ripe plums (e.g. damsons)
◦ 150 g wheat flour (type 405)
◦ 2 TSP. baking powder
◦ 100 g sugar
◦ 1 pinch of salt
◦ 120 g soft butter
◦ 2 eggs (size M)

Cover a springform pan (Ø 26 cm) with baking paper. Preheat oven to 180 degrees Celsius (convection oven: 160 degrees Celsius). For the cake, wash the plums, drain and cut in half. Remove the stone.

Mix flour, baking powder, sugar and salt in a mixing bowl. Add softened butter and eggs. Beat with the whisks of a hand mixer for about 1 minute at the highest speed until fluffy.

Pour batter into prepared pan and smooth out. Tuck plum halves into batter on edge, close together.

Bake in preheated oven for about 40 minutes. Serve with whipped cream, if desired. The cake makes about 12 pieces.
